Abstract

Korištenje prehrambenih aditiva neizbježno je u hrani životinjskog porijekla kako bi se
osigurala kvaliteta i produžio rok trajanja proizvoda. Aditivi se dijele na prirodne i umjetne, a
prema funkcionalnosti dijele se na 26 kategorija. U ovom diplomskom radu, opisane su kategorije
aditiva koje se najčešće koriste u hrani životinjskog porijekla te način označavanja. Pregledom
zakonske regulative korištenja aditiva, razrađeni su zakoni i uredbe Europske unije kojima su
propisani uvjeti uporabe aditiva u Republici Hrvatskoj. Najpovoljnije je upotrebu prirodnih i
sintetskih aditiva kombinirati u svrhu postizanja optimalnih rezultata te poboljšanja prehrambenih
proizvoda.

Abstract (english)

The use of food additives has become necessary in the production of food of animal origin
for the purpose of ensuring product quality and extending its shelf life. Food additives are divided
into natural and artificial and according to their functionality they are classified into 26 categories.
In this thesis, the categories of additives that are most commonly used in production of food of
animal origin and the way of labeling are described. By reviewing legal regulations for the use of
additives, the laws and regulations of the European Union that prescribe the conditions for the use
of additives in the Republic of Croatia have been elaborated. It is most advantageous to combine
the use of natural and synthetic additives in order to achieve optimal results and improve food
products.
