Abstract

Meso ima važan značaj kao izvor prehrane ljudi i životinja. Sa rastućim brojem
stanovništva, raste i potražnja za istim, te se posljedično tome svakoga dana otkrivaju nove
tehnologije i metode kako njegovu proizvodnju učiniti što učinkovitijom i bržom. Suvremene
tehnologije u klaoničkoj obradi životinja sežu od samog početka obrade, omamljivanja, preko
iskrvarenja, šurenja, skidanja kože, evisceracije i rasijecanja pa sve do završne obrade
trupova. U svakoj ovoj fazi postoji dio procesa koji se može unaprijediti i/ili automatizirati.
Napredak je prisutan i moguć u svakoj točki proizvodnje, pa se tako uvelike implementiraju
tehnologije poput biosenzora, digitalnih tehnologija, umjetne inteligencije, robotskih sustava
za rezanje i rasijecanje i slično. Svi ovi sustavi prolaze kroz periode i procese odobrenja i
prilagodbe na specifične uvjete u mesnoj industriji, te se, sukladno sa legislativama zemalja u
kojima se implementiraju, mogu koristiti u manjoj ili većoj mjeri, bez zanemarivanja ljudskog
čimbenika koji i dalje predstavlja ključnu figuru u navedenim procesima i kontroli istih sa
aspekta zdravlja, sigurnosti i higijenske ispravnosti konačnih proizvoda.

Abstract (english)

Meat is important as a source of nutrition for humans and animals. With the growing
number of the population, the demand for the same grows, and as a result, new technologies
and methods are discovered every day to make its production as efficient and fast as possible.
Modern technologies in the slaughterhouse processing of animals extend from the very
beginning of processing, stunning, bleeding, skinning, evisceration and cutting up to the final
processing of carcasses. In each of these stages there is a part of the process that can be
improved and/or automated. Progress is present and possible at every point of production, so
technologies such as biosensors, digital technologies, artificial intelligence, robotic systems
for cutting and slicing, and the like are widely implemented. All these systems go through
periods and processes of approval and adaptation to specific conditions in the meat industry,
and, in accordance with the legislation of the countries in which they are implemented, can be
used to a lesser or greater extent, without neglecting the human factor, which continues to
represent a key figure in the aforementioned processes and their control from the aspect of
health, safety and hygiene of the final products.
