Abstract

U istraživanju je korišteno 20 kunića kalifornijske pasmine podijeljenih po spolu. Cilj istraživanja je bio utvrditi postoje li razlike u metabolizmu masnih kiselina koje su ovisne o spolu. Sastav masnih kiselina određen je metodom plinske kromatografije. Rezultati su pokazali značajne razlike ovisno o spolu. Kod ženskih životinja su bile povišene koncentracije C17:0, C20:4n6, n3 LCPUFA i indeks za delta-5-desaturaciju. U mišićnom tkivu nisu primijećene razlike u sastavu masnih kiselina. Provedeno istraživanje potvrđuje pretpostavku kako je jetrena sinteza masnih kiselina različita ovisno o spolu kunića s jasnim povišenjem dugolančanih masnih kiselina kod ženki. Sve navedene promjene nisu vidljive u mišićnom tkivu pa možemo smatrati kako spolne razlike u sastavu masnih kiselina ne utječu na kvalitetu mesa.

Abstract (english)

During the trial 20 Californian rabbits were used divided into two groups according to sex. Trial was performed to determine differences in fatty acid metabolism that are dependent on sex. Fatty acid composition was determined by gas chromatography. Results showed significant differences according to sex. Female rabbits had higher concentrations of C17:0, C20:4n6, n3 LCPUFA and delta-5-desaturation index. Fatty acid profile of muscle tissue was not statistically different between groups. Our trial confirms hypothesis that liver synthesis of fatty acids is dependent on sex and that the concentration of long chain fatty acids are higher in female rabbits. Changes observed in the liver are not observable in muscle tissue, therefore, it could be concluded that sex differences in fatty acid metabolism does not influence meat quality.
