Abstract

Postoje brojni patogeni uzročnici koji se mogu prenijeti mesom, poput Toxoplasma gondii, Salmonella spp., Yersinia spp. i hepatitis E virus (HEV) te postaju bitan javnozdravstveni problem. Do onečišćenja mesa domaćih životinja može doći u raznim fazama proizodnje, od farme do stola. Stoga se provode serološka ispitivanja mesnog soka kako bi se utvrdila prevalencija navedenih uzročnika u domaćim životinjama. Također, s obzirom da mesni sok ima nižu razinu specifičnih antitijela od seruma, trebala bi se provesti standardizacija razrjeđenja mesnog soka te odabir mišića za pretragu. Dobiveni podaci o seroprevalenciji mogu se koristiti kao temelj u analizi rizika te se u tom sklopu predlaže korištenje sveobuhvatnog sustava osiguravanja sigurnosti mesa prema kojem se farme mogu kategorizirati prema riziku. Radi očuvanja javnog zdravstva potrebno je uspostaviti što efikasniju i ekonomski isplativiju inspekciju mesa kako bi se modernizirali sustavi kontrole i upravljanja sigurnošću hrane.

Abstract (english)

There are a number of pathogens that can be transmitted through meat, such as Toxoplasma gondii, Salmonella spp., Yersinia spp., and hepatitis E virus (HEV) and are becoming an important public health problem. Contamination of domestic animal meat can occur at various stages of production, from the farm to the table. Therefore, serological tests of meat juice are performed to determine the prevalence of these pathogens in domestic animals. Also, since meat juice has a lower level of specific antibodies than serum, standardization of meat juice dilution and selection of muscles for examination should be performed. The obtained data on seroprevalence can be used as a basis in risk analysis, and in this context it is proposed to use a comprehensive system to ensure meat safety, according to which farms can be categorized according to risk. In order to preserve public health, it is necessary to establish the most efficient and economically viable meat inspection in order to modernize food safety control and management systems.
