Abstract

Cilj ovog istraživanja bio je utvrditi razinu utjecaja pasmine i spola na kvalitativne
pokazatelje i koncentracije vitamina B12 u junetini. Istraživanje je provedeno na 32 uzorka
junećeg mesa, točnije mišića buta, od kojih je 16 uzoraka potjecalo od Holestein pasmine (8
ženskog i 8 muškog spola), a preostalih 16 su bili križanci mesnih pasmina (8 ženskog i 8
muškog spola). Boja junećeg mesa, kao važan kvalitativni pokazatelj koji je bitan za poželjnost
namirnice potrošača, varira u usporedbi s ranijim istraživanjima glede stabilizacije parametara
boje mesa, ali je izmjerena boja poželjna. Kemijski sastav junetine, koji je bitan poznavati zbog
nutricionističkog značaja za organizam ljudi, određivao se ISO metodama, te ne odstupa od
prosiječnog kemijskog sastava. Juneće meso smatra se najznačajnijim za unos dostatnih
dnevnih količina vitamina B12. Iako nisu statistički značajne, iz dobivenih rezultata, određenih
ELISA metodom, uočljivo je da ženke pasmine Holstein i križane pasmine imaju više
koncentracije vitamina B12 od mužjaka.
Analizom podataka nisu dokazane statistički značajne razlike među uspoređenim
skupinama junadi podijeljenih ovisno o pasmin i spolu.

Abstract (english)

The aim of this study was to determine the level of influence of breed and gender on
qualitative indicators and concentrations of vitamin B12 in beef. The research was conducted
on 32 samples of beef, specifically from the round muscles. Out of these, 16 samples originated
from the Holstein breed (8 females and 8 males), while the remaining 16 were crossbreeds of
meat breeds (8 females and 8 males). The color of beef, as the main qualitative indicator
influencing consumers preferences, varies in comparison to previous studies due to the
stabilization of meat color parameters, but the measured color is deemed desirable. The
chemical composition of beef is essential to understand due to its nutritional significance for
human health and was determined using ISO methods and does not deviate from the average
chemical composition. Beef is considered the primary source for meeting daily vitamin B12
requirements. Although not statistically significant, the obtained results that was done by
ELISA method, indicate that females of the Holstein breed and crossbreeds have higher
concentrations of vitamin B12 than males. Data analysis did not reveal statistically significant
differences among the compared groups of cattle based on breed and gender.
